Heirloom Tomato, Nectarine, Proscuitto, and Mozzarella Salad

Hey y’all! Well it’s Wednesday. You know what that means? It’s get it together Wednesday. The week becomes rough right about now. And Wednesdays, well, sometimes you just want to stuff your face with ice cream. Okay maybe that’s just me… and maybe that’s because I refuse to use AC right now. Y’all it’s expensive! 

Well lucky for you and me, I also happened to have fallen in love- with a salad?! Let me just tell you now, the marriage of tomatoes and nectarines would make any woman faint from total bliss. And I did… and it hurt.

_MG_0073_MG_0066It’s hard to really explain how wonderful the pairing is. There’s just something about the sweet and salty combination of fruit and meats (Yes if you didn’t know tomatoes are technically fruit. Ask any kindergarten teacher.). And all I can really do is just recommend that you try it as soon as possible. It’s great for an afternoon lunch and it’s great for an evening dinner while you drink wine and watch the sun go down. Basically it just great!

Another beauty about this salad… well it’s just so easy. I mean, okay in all honesty, most salads are fairly easy to make. You cut ingredients up, you put it in a bowl, and then you toss it. Ok you got me! I’ll stop with all this “It’s so easy stuff.” But let’s just agree that it’s about time you try this salad. Let’s get to it!


serves 1


2 large heirloom tomatoes

6-7 small heirloom cherry tomatoes

1-2 nectarine(s)

2-3 pieces of proscuitto

3 slices of mozzarella (about 1-2 oz)

olive oil, sea salt, and pepper (for seasoning)


1. Cut up tomatoes, nectarines and mozzarella.

2. Tear prosecution into strips and combine with tomatoes, nectarines and mozzarella.

3. Season with olive oil, sea salt, and pepper.

4. Toss and eat!

And just like that, you’ve got yourself a great looking salad. You’re welcome!
