Hey y’all! Is anyone else having one of those sleepy weeks. I feel like July 4th came and went. Yes, there was tons of great food. And yes, some of it might have been red, white, and blue. There was definitely a lot of grilling going on. So real quick I just have to share what July 4th was like for me.
It was a great weekend. I have to admit, I ate a lot, I may have drank a lot, and I definitely slept a lot. But now I find myself waking up at 6:30 AM (Yes, I recognize how early that is, but I do wake up at this time on the reg) and I’m so exhausted. This is not normal for me. I’m all kindsa cattywampus this week.
So here’s my quick fix to waking up. You’ll thank me once you’ve made it. Listen, it’s easy, it’s fresh, and it’s got alcohol in it. Yes, you heard me. Don’t worry it’s not enough to get you drunk. I wouldn’t do that to you on a work day… at least not right now.
Now, really quick, things to know about this dish. You see I like to top yogurt with my cherry and lychee jubilee. It transforms what is usually a dessert into a breakfast item. If we’re being realistic… most deserts could be breakfast. What do you think pan au chocolat is???? If you said breakfast, y’all need to stop kidding yourselves. But I will except the both as an answer. So if you are in the dessert as breakfast spirit, why not just jump in. Throw that jubilee on some ice cream and call it a Thursday morning. I’m not judging.
CHERRY & LYCHEE JUBILEE
1.5 cups cherries, pitted and halved
10 lychee, pealed and cored
1 tbsp butter
1/2 cup refined sugar
1 tbsp cornstarch
3 tbsp amaretto or brandy
1.5 cup yogurt, or 3 ice cream scoops – I said I wouldn’t judge
1. Core and halve cherries. Peal and deseed lychee.
2. Over medium-heat in a saucepan, heat butter. Once melted add sugar, cherries, and lychee. Stir frequently.
3. Once you have some juice that has accumulated in the pan, add cornstarch to thicken your sauce up. Stir constantly till you’ve reached a desired thickness… think slightly lighter than that green slime that was dunked on kids heads back in the early days of Nickelodeon.
4. Add amaretto. Stir.
5. Serve mixture over yogurt… or again put that on ice cream. It will blow your mind. Please tag instagram and let me know that someone has done this. It will make me happy, and I’ll probably drop this crazy diet I’ve started on.
And just like that you’ve got yourself a cherry and lychee jubilee… I hope it’s topped on something spectacular. But if it’s not, don’t worry. It’s good on it’s own too.
